Recipe: Quick and Easy Stuffed Peppers
4 Bell Peppers (Your choice of color)
1 lb lean ground beef or turkey
1 can corn, rinsed and drained
1 can of refried beans (or black beans, rinsed and drained)
46 oz Fat Free or Reduced Fat Cheddar or Mexican Blend Cheese
2 cups cooked rice
Salsa to taste
Optional: Sour Cream, Guacamole, Extra Cheese
Brown and season beef using taco seasoning.
Preheat oven to 350 deg.
Mix beans, beef, rice, corn, and half of cheese in large bowl.
Stuff halved peppers with mixture.
Top with remaining cheese.
Bake for 25-30 minutes.
Top and serve!
